Domaine Sallies wines are virtually organic and from ungrafted rootstock. The vineyard is a drained lagoon which is flooded each year for 6 - 8 weeks destroying the dreaded Phylloxerra bug and also eliminating the requirement for fertilizers & pesticides.

The Chardonnay is a delightfully unoaked white from the Languedoc region of France. The grapes are harvested at night to protect their quality. Overall a great everyday wine, well balanced with full flavors. Pair with any grilled fish in a lemon butter sauce.

The Cabernet Sauvignon shows the typical cabernet aromas with scents of red fruit and cassis. A round, elegant and well-balanced delicacy on the tongue. Serve with cold cuts (especially smoked) or with barbecued red meat or duck.
